This classic sandwich filler is transformed into a hearty burger. These burgers are low in fat making them a great alternative to beef burgers, perfect for lunch or dinner.
Ingredients
Tuna 220 g
Breadcrumbs 45 g
Thai Red Curry Paste 20 g
Spring Onions 20 g
Wholemeal Baps 220 g
Mayonnaise 15 g
Sweetcorn 66 g
Relish 80 g
Instructions
1. Preheat the oven to 200C.
2. Blend the tuna, breadcrumbs, curry paste and spring onions in a food processor.
3. Divide the blended mixture into 4 and shape into 4 burger rounds using a large plain round cutter.
4. Brush the burgers with some of the reserved sunflower oil from the tuna.
5. Bake for 20 minutes, until golden and firm.
6. Lightly toast the buns. Mix the sweetcorn and relish. Spread mayonnaise over each of the bun bases, top with lettuce, a tuna burger and relish sweetcorn.
