This packed sandwich will beat that lunch time slump and keep you going until dinner time.
Ingredients
Sliced Roast Beef 90 g
Wholegrain Bread 70 g
Tomato 150 g
Avocado 75 g
Mixed Salad Leaves 30 g
Basil 10 g
Black Pepper 2 g
Balsamic Vinegar 5 ml
Olive Oil 5 ml
Instructions
In a bowl, mix the leaves with the oil and vinegar. In another bowl, mash the avocado with the salt and pepper.
Spread the avocado equally on each slice of bread. Spoon the salad leaves on one slice of bread, and then top with the beef slices and a few tomato slices.
Finally, top with some fresh basil leaves and then firmly place the second slice of bread on the top. Cut diagonally and devour.
