Apples, celery and walnuts can only mean one thing - Waldorf salad! This salad is a source of fibre, low in salt and easy to make!
Ingredients
Quinoa 200 g
Walnuts 40 g
Olive Oil 22 g
Orange Zest 3 g
Apple Cider Vinegar 30 g
Salt 1 g
Pepper 1 g
Nutmeg 1 g
Parsley 20 g
Apple 153 g
Raisins 10 g
Celery 120 g
Orange Juice 50 ml
Instructions
1. Preheat the oven to 175C. Then place the quinoa in a saucepan.
2. Cut the apples and celery and add to saucepan along with orange juice and raisins.
3. Cook using two-and-a-half times the amount of water to grain, bringing to the boil and then simmering in low heat, partly covered, for 20-25 minutes.
4. While the quinoa is cooking, roast the walnuts in the oven for 5 minutes, taking care not to burn them. Then coarsely chop the nuts and set aside.
5. In a large bowl, combine the oil, zest, vinegar, salt, pepper and nutmeg. Mix well.
6. Now add the parsley and chopped walnuts. Toss all together until the salad is well mixed. Enjoy!
