Ingredients
Courgette, thinly sliced 100 g
Yellow squash, thinly sliced 100 g
Large white onion, diced 150 g
Fresh green beans, trimmed and snapped 115 g
Frozen corn kernels, thawed 180 g
White hominy 425 g
Chickpeas, canned 425 g
Whole chicken wings, split 440 g
Cubes chicken bouillon 12 g
Tomato sauce 75 g
Garlic powder 15 g
White potatoes, peeled and cubed 320 g
Jalapeno peppers 66 g
Water 1 L
Instructions
In a large pot, combine courgette, yellow squash, onion, green beans, corn, hominy, chickpeas, chicken, bouillon, tomato sauce, garlic powder, potatoes, jalapenos and water.
Bring to a boil, reduce heat and simmer until chicken falls off the bone and flavors are well blended, approx. 1 to 2 hours.
Serve hot and enjoy.
