This delicious halloumi and tomato salad is so simple to make, it's healthy and full of flavour too. Gluten free and egg free, it makes a perfect starter or light meal to make for friends and family.
Ingredients
Tomatoes 520 g
Green Pepper 160 g
Red Onion 60 g
Garlic Gloves 12 g
Olive Oil 50 ml
Halloumi Cheese 250 g
Instructions
1. Slice the tomato thinly and arrange on a platter. Slice the green pepper and the onion very thinly and arrange on top of the tomato.
2. Mince the garlic cloves and add to olive oil and set aside to infuse.
3. Slice the halloumi into 6 thin slices.
4. Heat a non stick frying pan and fry the cheese, without oil, for a minute or 2 on each side until it has golden patches.
5. Arrange the hot cheese on the salad and drizzle with garlic infused oil.
