Ingredients
Celery 110 g
Carrots 160 g
Apples 150 g
Chicken Broth 1000 ml
Olive Oil 5 ml
Potato 250 g
Cheddar Cheese 200 g
Worcestershire Sauce 5 g
Salt 1 g
Instructions
1. In a large saucepan, cook the celery, carrots, and apple in the oil over medium heat until softened, about 7 to 8 minutes.
2. Add the chicken broth and potato and bring to a boil.
3. Reduce heat to low and simmer, cover, until the potato is tender, about 15 minutes.
4. Puree the soup in a blender or with a food processor.
5. Return to saucepan, whisk in the cheddar cheese and Worcestershire sauce, and season to taste with salt.
6. Serve the soup with croutons or bread (if desired).
