Squid is rich in phosphorus and vitamin B12. This deliciously simple recipe maintains the squids fresh flavour, with just a light seasoning, fried to perfection and a squeeze of lemon.
Ingredients
Squid 500 g
Lemon Zest 8 ml
Fresh Lemon Juice 40 ml
Oregano 2 g
Olive Oil 100
Salt 1 g
Pepper 1 g
Flour 80 g
Instructions
1. Cut the squid into bite sized pieces and mark the inside surface with criss cross lines. Place the squid onto kitchen paper and allow to dry.
2. To make the dressing: Whisk a teaspoon of lemon zest with 3 tablespoons of lemon juice, oregano and the olive oil. Season with salt and pepper.
3. Heat the olive oil in a pan. Sprinkle the flour on to a plate, season with salt and pepper, and coat squid with the flour.
4. Cook the coated squid in small batches in the hot oil for a couple of minutes.
5. Take out and drain on kitchen paper.
6. Serve hot.
