This low fat, protein packed noodle dish is perfect fuel for your work out!
Ingredients
Water for miso 1000 ml
Miso 50 g
Soy sauce 10 g
Rice Wine 20 g
Chicken 150 g
Broccoli 100 g
Spinach 100 g
Noodles 150 g
Egg 100 g
Basil 10 g
Instructions
1. To make the broth: In a saucepan, make the miso soup according to packet. To the same pan add the soy sauce and rice wine and heat for 5-10 minutes.
2. Add the chicken to a wok or pan and cook for 15 minutes. Add the broccoli and spinach to the same pan and cook for a further 10 minutes.
3. Cook the noodles in boiling water for 3-4 minutes. Drain the noodles and allow to rest.
4. Poach an egg and place on top of the noodles, add chicken and vegetables to the dish. Just before serving, pour over the broth and garnish with basil.
