Forget shop-bought cans of baked beans, this homemade version elevates the mere beans on toast to another level. These beans are well balanced, perfect to set you up for the day or beat that afternoon slump.
Ingredients
Chopped Tomatoes 227 g
Chickpeas/Mixed Beans 210 g
Olive Oil 10 ml
Red Pepper 80 g
Garlic Clove 3 g
Paprika 2 g
Red Wine Vinegar 10 ml
Parsley 2 g
Bread 74 g
Instructions
1. Soak beans overnight in water.
2. Next day, heat the oil in a small pan, add the onion and pepper, and fry gently until soft, about 10-15 mins.
3. Crush half the garlic and add this to the pan, along with the tomatoes, paprika, vinegar, beans and some seasoning.
4. Bring to a simmer and cook for 10-15 mins or until slightly reduced and thickened.
5. Toast the bread, rub with the remaining garlic and drizzle with a little oil.
6. Spoon the beans over the toast, drizzle with a little more oil and garnish with parsley.
