A healthy and satisfying breakfast choice, eggs are a good source of protein which will leave you feeling fuller for longer!
Ingredients
Broccoli 100 g
Cherry Tomatoes 200 g
Eggs 200 g
Wholemeal Bread 120 g
Rapeseed Oil 5 ml
Instructions
1. Fill a wide-based saucepan one-third full of water and bring to the boil.
2. Add the broccoli and cook for 2 minutes. Add the tomatoes, return to the boil and cook for 30 seconds.
3. Place on plate in the oven while you poach the eggs.
4. Return the water to a gentle simmer.
5. Break the eggs into the pan, one at a time, and cook for 2 1/2 - 3 minute or until the whites are set and the yolks are runny.
6. Divide the slices of toast between the two plates and top with the broccoli and tomatoes.
7. Use a slotted spoon to drain the eggs, then place on top. Drizzle with the oil.
8. Season as preferred and serve immediately.
