Cuan, from our Active Kids course, gave us this beautiful vegetarian Falafel recipe to try. It makes for a great lunchtime option, or as a between-meals snack to keep energy levels high.
Ingredients
Chickpeas 500 g
Coriander (finely chopped) 3 g
Garlic (crushed and finely chopped) 12 g
Chilli (fresh) 3 g
Salt 1 g
Black Pepper 1 g
Tomatoes (chopped) 160 g
Plain white flour 1000 g
Water 560 ml
Honey 15 ml
Instructions
To make the Falafels:
Soak chickpeas overnight, then drain and add them to a blender.
Add the coriander, garlic, chilli, salt and pepper and blend.
Using your hands or a spoon form or shape into patties or balls.
Heat some oil in a pan and shallow fry.
Serve with pitta bread and chopped tomatoes.
To make the Pitta Bread:
Heat oven to 180 degrees C.
Mix the flour, water and honey together and form/shape into balls and then roll flat.
Place on baking tray and bake for 5 minutes.
