These chickpea and butternut squash burgers are a great meat free twist on the classic burger!
Ingredients
Butternut Squash 500 g
Chickpeas 400 g
Breadcrumbs 100 g
Cumin 12 g
Eggs 57 g
White Flour 80 g
Olive Oil 25 g
Sesame Seeds 22 g
Coriander 6 g
Instructions
1. Preheat oven to 200C. Place the butternut squash in a bowl with 3 tablespoons of water and microwave for 6-8 minutes until tender. Leave to cool for 2 minutes.
2. Place the butternut squash and chickpeas into a food processor and blend mixture.
3. Add the breadcrumbs, cumin, coriander, egg and flour. Blend again to combine.
4. Divide the mixture into 6 and shape into 6 burger rounds using a round cutter.
5. Pour the sesame seeds into a shallow dish. Press the burgers into the sesame seeds and turn to coat evenly.
6. Place burgers onto a parchment lined baking tray, cover and chill for 30 minutes.
7. Drizzle the burgers with olive oil and bake for 20 minutes until golden brown.
8. Serve & enjoy!
