This soup is the perfect replenishing meal after a cold outdoors training session.
Ingredients
Rapeseed oil 11 g
Fine Egg Noodles 100 g
Large Chicken Breast 150 g
Red Onion 60 g (1 small unit)
Red Chilli 45 g (1 small unit)
Garlic 12 g
Ginger 10 g
Broccoli 100 g
Red Pepper 80 g
Mushroom 50 g
Green Cabbage 50 g
Brown Miso Paste 5 g
Soy Sauce 5 g
Lime Wedges 40 g
Sesame Seeds 2 g
Water 500 ml
Instructions
1. Soak the noodles in boiling water until soft. While soaking the noodles, prepare the vegetables.
2. Once the noodles are soft, place them in soup bowls ready for when the soup is prepared.
3. Heat the oil, in a pan, until hot and the add the onion. Stir fry for 30 seconds.
4. Add the chicken and continue to stir on a high heat.
5. Add the chilli, ginger and garlic. Cook for 30 seconds.
6. Add the broccoli, pepper, mushrooms, and cabbage. Stir for approximately 30 seconds.
7. Add water, miso and soy sauce. Simmer for 1 minute. Add more soy or miso, if needed, and garnish with sesame seeds.
