A quick, easy and nutritious breakfast made with eggs and green veg such as broccoli and courgettes. Courgettes are a very good source of vitamin A, vitamin C and folic acid, this along with broccolli provides a great source of dietary fibre making a very nutritious wheat and dairy free dish, low in sodium and salt!
Courgettes 140 g
Eggs 150 g
Broccoli 85 g
Dill 5 g
Gluten Free Flour 15 g
Sunflower Oil 15 ml
1. Beat the eggs in a bowl, add the chopped broccoli, courgettes and most of the dill, and mix together. Add the flour, mix again and season.
2. Heat the oil in a non-stick frying pan. Put a large serving spoon of the mixture in the pan, then add 2 more spoonfuls so you have 3 fritters.
3. Leave for 3-4 mins on a medium heat until golden brown then flip over and leave to go golden on the other side.
4. Repeat to make 3 more fritters. Scatter with the remaining dill to serve.
