This side is perfect to combine with meat or fish, for dinner or lunch as the garlic and the thyme add a wonderfully aromatic and tasty flavour. This side is also suitable for those that are gluten, egg and dairy intolerant.
Tomatoe (halved, 10 units) 1500 g
Garlic Cloves (sliced, 4 units) 20 g
Thyme 5 g
Balsamic Vinegar (3 tbsp) 30 ml
Olive Oil (2 tbsp) 20 ml
1. Heat oven to 160 C / 140 C Fan/ Gas Mark 3.
2. Put the tomatoes on a baking sheet with the garlic and thyme, drizzle over the balsamic vinegar and olive oil and roast for 1 hr.
3. Remove and set aside to cool.
