These high fibre peanut clusters are easy and simple to make, perfect for a lunch box or an on-the-go snack!
Ingredients
Brown Breadcrumbs 28 g
Smooth Peanut Butter 75 g
Pumpkin Seeds 20 g
Brazil Nuts 40 g
Instructions
1. Make the breadcrumbs by adding sliced bread to a food processor- should take about 20 seconds.
2. Add all ingredients to a mixing bowl and stir until well mixed.
3. Using your hands, mould the mix to your desired shape and size. These can be squares, sausage shape or balls. Wrap in a cling film or foil and keep in the fridge.
4. Serve after a few hours of cooling.
