These Energy Bars are a perfect high fibre, low fat option for a pre-workout snack! They are also low in salt and a good vegan choice!
Pumpkin Seeds 50 g
Sesame Seeds 30 g
Cacao Nibs 35 g
Raisins 40 g
Agave Syrup 16 g
Zest of Fresh Lime 5 g
Fresh Lime Juice 10 g
1. Grind the pumpkin seeds, cacao nibs (the finer the better) and the sesame seeds in a coffee grinder or food processor. Place the flour in a bowl and add the raisins and agave syrup. Blend well with wooden spoon, to begin to form dough.
2. Grate the zest of 1/2 fresh lime and add to the mix. Also add the lime juice. With your hands, form one large dough ball. Roll out over a cool surface and cut into three bar shapes.
3. Put the bars on a plate and wrap with cling film and refrigerate overnight until firm. You can slice into bite-size chunks if desired - perfect for long runs, bike rides or endurance racing.
