Colorful, zesty, full of flavour quick meal. Great lunch idea for vegetarians and vegans. It is also low in fat, salt, gluten free and suitable for celiacs.
Rice 200 g
Olive Oil 15 ml
Roasted Peppers 225 g
Fajita seasoning mix 15 g
Black-eyed Beans (rinsed and drained) 400 g
Lime Juice 30 ml (1 unit)
Coriander (fresh, roughly chopped) 15 g
1. Cook rice according to pack instructions, then drain.
2. Heat 1 tbsp oil in a frying pan. Add the sliced peppers and fajita seasoning, and cook for 1 min until fragrant.
3. Stir through the rice and beans, and heat until piping hot.
4. Mix the remaining oil, lime juice, coriander and some seasoning into the pan and serve.
