Try this flavorful seafood dish bursting with nutrition and goodness - omega 3 rich salmon and protein packed quinoa; served with a fresh citrus tomatillo salsa to take this dish to the next level.
Ingredients
Quinoa 212 g
Grapefruit 340 g
Oranges 320 g
Tomatillos 160 g
Fresh Lime Juice 20 g
Red Jalapeno 1 g
Coriander 10 g
Onion 10 g
Salt 1 g
Pepper 1 g
Rapeseed Oil 10 g
Salmon 440 g
Instructions
1. Cook quinoa according to directions on package. Once cooked, allow to cool completely.
2. To make the salsa cut the grapefruit and oranges and put in a bowl. To the same bowl add tomatillos, fresh lime juice, red jalapeno, coriander, onion, salt and pepper.
3. Heat rapeseed oil in a pan and add the salmon skin side down. Place pan in oven. Cook at 200C for 5-10 minutes.
4. Combine the cooled quinoa with coriander. Strain the excess liquid from the salsa into the quinoa to add flavour.
5. Plate the quinoa. Top with salmon fillet and finish with the salsa.
