These healthy salmon and baby vegetable parcels are cooked in foil, so the fish remains moist, also it is gluten free, dairy free and is low saturated fat.
Ingredients
Salmon 150 g
Lemon 70 g
Salt 2.5 g
Pepper 2.5 g
Thyme 10 g
Carrots 100 g
Sweetcorn 50 g
Mange-Tout 50 g
Asparagus 50 g
Green Beans 50 g
Instructions
1. Place the salmon fillet onto a large square of tin foil. Cut the lemon in half and squeeze the juice of one half over the salmon, and then season the fish with the salt and pepper.
2. Cut 3 slices of the remaining lemon, and place on top of the fish, together with the herbs.
3. Add the vegetables to the parcel and seal. Bake in for 20 minutes at 180 C.
4. Remove from the oven, cut the foil open- taking care of the escaping steam- and serve on a warm plate.
