A very simple but wonderful and versatile tuna dish. Tuna is a good source of heart-healthy omega-3 fatty acids and the use of wholegrain bread makes this a high fibre dish, providing approximately 7g of fibre per portion!
Ingredients
Tuna 75 g
Mayonnaise 5 g (1 tsp)
Mustard 5 g (1 tsp)
Sweet Pickle Relish 3 g
Lemon Juice 2 g
Ground Cinnamon 1 g
Curry Powder 1 g
Black Pepper 1g
Wholegrain Bread 88 g (2 slices)
Cucumber 25 g
Tomato 50 g
Rocket 10 g
Instructions
1. In a bowl, mix the tuna, mayonnaise, mustard, relish, lemon juice, cinnamon, curry powder, and pepper.
2. Cover, and refrigerate until ready to serve.
3. Spread the mix onto a layer of wholegrain bread, top with cucumber, tomato and rocket. Place the other slice of bread on top, cut in half and serve.
