Apples, celery and walnuts can only mean one thing - Waldorf salad! This salad is a vegan and egg free alternative to the regular waldorf salad, a low salt option and easy to make!
Ingredients
Quinoa 200 g
Water 450 ml
Orange Juice 50 ml
Apple 175 g (1 medium unit)
Celery 120 g (2 sticks)
Walnuts 40 g
Olive Oil 22 g (2 tbsp)
Orange Zest 3 g
Apple Cider Vinegar 30 g
Salt 1 g
Pepper 1 g
Nutmeg 1 g
Parsley 20 g
Raisins 10 g
Instructions
1. Preheat the oven to 175C.
2. Place the quinoa in a saucepan.
3. Cook using 450ml of water and 50ml orange juice, bring to the boil and then simmering in low heat, partly covered, for 20-25 minutes.
4. Cut the apples and celery into bite-sized chunks and set aside in a large bowl.
5. While the quinoa is cooking, roast the walnuts in the oven for 5 minutes, taking care not to burn them. Then coarsely chop the nuts and add to the bowl of apple and celery.
5. Combine the oil, zest, vinegar, salt, pepper and nutmeg. Mix well. Add the parsley and raisins.
6. Add this combination to the apple and celery bowl. Add quinoa. Toss all together until the salad is well mixed. Enjoy!
