Try this Malaysian inspired dish - a delicious and warming seafood one pot dinner thats high in protein and low in fat and sugar.
Ingredients
Noodles 120 g
Garlic 36 g
Fresh Ginger 30 g
Onion 60 g
Lemongrass 160 g
Coriander Seeds 1 g
Water 75 ml
Coconut Milk 100 g
Turmeric 1 g
Red Chilli 12 g
Fish Stock 350 g
Beansprouts 100 g
Prawns 80 g
Shrimp 80 g
Sugar-Snap Peas 90 g
Instructions
1. Soak the noodles in hot water for 10 minutes or until soft.
2. To make the sauce add crushed garlic cloves, ginger, diced small onion, lemongrass, coriander seeds and water to a saucepan.
3. Into the same pan add coconut milk, turmeric, red chilli and fish stock and simmer for 10-15 minutes.
4. Drain the noodles and divide them between two bowls, adding the beansprouts on top.
5. Add the prawns to the sauce and simmer for 1 minute. Add the sugar-snap peas and return to a simmer for 2-3 minutes.
6. Pour the sauce and prawns over the noodles and beansprouts.
