This high protein pasta dish is quick, easy to make, full of flavour and it is sure to become a weekly favourite!
Ingredients
Garlic Clove 5 g
Olive Oil 25 g
Pine Nuts 20 g
Parsley 30 g
Water 30 ml
Tagliatelle 120 g
Mackerel 400 g
Tomatoes 150 g
Watercress 75 g
Lemon Juice 20 g
Black Pepper 1 g
Parmesan Cheese 20 g
Instructions
1. To make the pesto: Peel the garlic and place in food processor along with pine nuts, oil, parsley and water. Mix until combined.
2. Cook the pasta for 10-15 minutes and prepare the mackerel by cutting it into bit sized chunks.
3. To a hot pan add the tomatoes, oil and mackerel and cook for 5-10 minutes.
4. Add the pasta to the pan and stir in the watercress so it just starts to 'wilt.' Add as much pesto as desired, and garnish parmesan cheese. Top with lemon juice and black pepper (optional).
