Easy to cook roast pork with herbs and sweet apricot flavour. This recipe is low in salt and sugar. Try with roast potatoes and your choice of greens.
Apricot Jam (1 tbsp) 10 g
Loin of Pork (skin and fat cut off) 800 g
Fresh Breadcrumbs 50 g
Thyme leaves (3 units) 6 g
Olive Oil 10 ml
1. Heat oven to 200 C/ Fan 180 C /Gas Mark 6.
2. Brush the jam all over the pork loin.
3. Mix together breadcrumbs and thyme leaves, then press over the pork.
4. Place the pork in a baking tray and drizzle or spray with olive oil. Roast for 1 hr until cooked through. Leave to rest, uncovered, for 10 mins.
