A melt in the mouth soup, and most certainly nutrient rich. Enjoy this hearty soup any time of the year.
Courgette (thinly sliced) 100 g
Yellow squash (thinly sliced) 100 g
Large white onion (diced) 150 g
Fresh green beans (trimmed and snapped) 115 g
Frozen corn kernels (thawed) 180 g
White hominy 425 g
Chickpeas (canned) 425 g
Whole chicken wings (split) 440 g
Chicken Bouillon Cubes 12 g
Tomato sauce 75 g
Garlic powder 15 g
White potatoes (peeled and cubed) 320 g
Jalapeno peppers 66 g
Water 1 L
1. In a large pot, combine courgette, yellow squash, onion, green beans, corn, hominy, chickpeas, chicken, bouillon, tomato sauce, garlic powder, potatoes, jalapenos and water.
2. Bring to a boil, reduce heat and simmer until chicken falls off the bone and flavors are well blended, approx. 1 to 2 hours.
3. Serve hot and enjoy.
