Fish Friday? Mix things up in the kitchen and try this healthy and satisfying fish stew.
Ingredients
Rice 200 g
Olive Oil 5 g
Onion 240 g
Tomatoes 510 g
Tomato Juice 200 ml
Water 50 ml
Garlic Cloves 12 g
Tomato Paste 25 g
Cod 150 g
Soybeans 100 g
Tinned Butter Beans 100 g
Instructions
1. Set the rice to boil in a small pan- as per the packet's instructions.
2. Meanwhile, in a separate pan, heat the oil and add the onion. Cook on a really low heat, with a lid on, for 4-5 minutes.
3. Add the garlic and tomatoes and cook for 2 minutes. Now add the tomato juice, water and tomato paste, and bring to a slow simmer for 2 minutes.
4. Add the fish, soybeans, butter beans and rice. Mix thoroughly. The fish should only take about 5-10 minutes to cook.
5. Season as preferred.
