Start your day with this high fibre Scandinavian Muesli! This protein rich muesli is dairy free, egg free and suitable for vegetarians!
Ingredients
Cooking Spray 10 ml
Oats 200 g
Rye Flakes 60 g
Almonds 20 g
Flaked Coconut 10 g
Raisins 60 g
Honey 10 g
Cinnamon 1 g
Vanilla Extract 5 ml
Flaxseed 5 g
Instructions
1. Preheat oven to 180C. Coat a baking sheet with cooking spray. Spread oats and rye (or wheat) flakes on the baking sheet. Bake for 10 minutes.
2. Stir in almonds and coconut; bake until the oats are fragrant, about 8 minutes. Turn off the oven. Stir raisins into the muesli.
3. Microwave honey for 10 seconds in a glass measuring cup. Stir in vanilla and cinnamon, drizzle over the muesli and stir to coat.
4. Return the muesli to the turned-off warm oven and let cool completely, about 2 hours. Stir in flaxseeds.
