A brilliantly simple recipe for a dessert or a sweet snack. Low in fat and salt and suitable for a range of food intolerances / allergies.
Peaches (plus 1 peach to serve, 4 units) 440 g
Lemon Zest (1 unit)
Lemon Juice 10 ml
Sweet Sparkling Wine 125 ml
Golden Caster Sugar (2 tbsp) 20 g
1. Whizz the peaches in a blender with the lemon zest and juice, sparkling wine and sugar. Pour into a shallow dish and freeze for 4-5 hrs, or until firm. 2. Scrape the mixture into flakes with a fork and serve with chunks of freshly cut peach.
